Flavia’s Tomato Quiche

I remember heading to Vincent Avenue and this being one of the tasty treats I could expect. Delicious in the morning, but I like it best as a lunch dish!

 1 pie crust shell (you can always be fancy and make your own too!)
 1 cup of shredded swiss cheese
 1 28oz. can of peeled tomatoes, drained and chopped
 1 small onion, chopped
 5-10 leaves of fresh basil, chopped
 2 eggs
 S&P
 1 cup of whole milk

Preheat oven to 375 degrees

Place shredded cheese in bottom of pie crust

Now place tomatoes and onion on top

Sprinkle all over with the basil and set aside

In a small bowl, beat the two eggs with a fork and then stir in the S&P and milk

Pour this egg mixture over your quiche ingredients

Bake for 1 hour

**May add other veggies, just give them a quick saute or parboil first!
