Flavia’s Mac & Cheese

This is my Grandma's macaroni & cheese. I miss her so much so it's nice to cook this up and think of her. To my surprise, it freezes great. And as my mom says, it's popular at tailgates, picnics and backyard cookouts, i.e. pretty much everywhere!

 1 16oz. box of pasta (elbow, penne, farfalle, campanelle)
 1 red onion
 1 small (or half) green pepper
 Butter
 2 cans of stewed tomatoes
 1 bag of shredded cheddar
 1 bag of shredded swiss
 S&P

Cook pasta as you normally would, though slightly undercooked, barely al dente

Submerge pasta in cold water immediately to prevent from cooking more and drain

Once pasta is just hangin out, preheat oven to 350 degrees

Sauté onion and pepper in butter and S&P

In a large bowl, stir the tomatoes to break them up, then and add sautéed veggies

Layer pasta, tomatoes, shredded cheddar, dots of butter and S&P

Next layer, same as above but use shredded swiss

Keep layering and add swiss on top

Cook for 30 minutes or so!
