Susie’s Asian Noodle Salad

This is really yummy and works great as a side dish or entree. Don't bother getting the bags of shredded carrots from the store as they're flavorless. And since this salad is so easy, you can spend that extra 10 minutes doing it yourself!

 1lb. whole grain fettuccine
 1/3 cup peanut butter
 1/4 cup rice wine vinegar
 1/4 cup soy sauce
 1/2 cup vegetable oil
 1/4 cup dark sesame oil
 2TB honey
 2 garlic cloves, finely diced
 2 carrots, shredded
 3/4 cup of defrosted peas

Cook the fettuccine according to directions and drain well

Blanch your shredded carrots

In a large bowl, place the peanut butter and then slowly add the other ingredients to incorporate

Add the defrosted peas at the very end
