Seafood Quiche

This mystery recipe is "fabulous" according to Debby, though I've never tried it. Will give it a go soon and report back!

 2TB shallots
 3TB butter
 2TB vermouth
 1/2 cup chopped scallops
 1/2 cup lump crabmeat (don't use imitation!!)
 1/2 cup shrimp
 3 eggs
 1TB tomato paste
 1 cup heavy cream
 1/4 cup shredded swiss

Preheat oven to 375 degrees, and either grease and flour 10" or use a store-bought crust.

Saute shallots in butter and vermouth, adding S&P to taste. Let cool.

In large bowl, beat 3 eggs well. Add the tomato paste and stir well.

Now add your remaining ingredients, pouring the heavy cream slowly on top and then finishing with the shredded swiss.

Pour immediately into pan or crust and bake for 45 minutes.
