Nanny’s Pepper Steak

This recipe is so yummy and works great in any season. Also makes great leftovers, should you actually have any left!

 1.5 lbs of beef stir-fry strips
 1-2TB paprika, hot and mild (not smoked)
 Butter
 2 cloves of garlic, sliced
 1.5 cups of beef broth
 1 large onion or two medium red onions
 1 red pepper
 1 green pepper
 1/4 cup soy sauce
 2-3TB of cornstarch
 2 cups of rice
 chow mein noodles (optional)

Place the beef strips in a large ziploc bag and generously sprinkle with paprika and S&P. Shake it up and let stand for at least 30 minutes

In a large skillet pan, brown the beef strips in butter over medium heat

Add the garlic and cook one minute, then add the broth

Cover and simmer for 30 minutes

While simmering, slice the onions and peppers into strips similar in size/shape to the beef

After the 30 minutes of simmering, stir in the onions and peppers, cook for 10 minutes at medium heat

In a separate bowl, mix together the soy sauce with 1/4 cup of water and the cornstarch. Stir in with the rest of the ingredients in the pan.

Serve over rice with optional garnish of chow mein noodles!
