Leslie’s Chopped Salad

Leslie: "This is such a pretty salad. Goes with everything." Play with veggie proportion too to make this salad your own!

Prep Time30 mins
 2 stalks of celery
 1 red pepper
 1 red onion
 1 cucumber - prefer seedless
 1 pint of grape tomatoes
 12-14oz. Edamame beans - fresh in vacuum pack
 1 ear of fresh corn or 10 oz. frozen corn (you can leave it raw or cook it)

Chop celery, pepper, onion, cucumber into large, but bite-size pieces

Place in large serving bowl

Cut grape tomatoes in half and place in the bowl

Put the corn and edamame into the bowl too and mix well

Choose your favorite vinaigrette and toss

Serve immediately
