Leslie’s Bolognese Sauce

Leslie: "I like to double the batch for a big group and freeze leftovers. Another tip, make ahead of time and simmer in the crock pot all day, that's my favorite way to cook this family fave. Also, be liberal with the spices, no need to be exact with this recipe. Enjoy!"

 1 lb lean ground beef
 drizzle olive oil in sauce pan to brown beef
 2 cloves of garlic, chopped
 1TB dried oregano
 1/4tsp red pepper flakes
 1 1/4 cup dry red wine
 1 (28) oz can crushed tomatoes, San Marzano are great
 2TB tomato paste
 S&P
 1/4tsp nutmeg
 1/4-1/2 cup fresh basil leaves, torn
 1/4 cup heavy cream

Brown beef in large sauce pan then drain

Add garlic, oregano, red pepper flakes & 1 cup red wine

Simmer 5-7 minutes, stirring occasionally

Add crushed tomatoes, tomato paste, nutmeg, and S&P

Continue to simmer another 15 minutes or so

This is the time that Leslie transfers the sauce to a crock pot (If not, it's okay to leave in sauce pan)

Now add heavy cream, the remaining 1/4 cup of red wine & torn basil leaves

Keep simmering and do a taste test for s&p and other spices

If in a crock pot, cook on low until ready to eat

Serve stirred up with rigatoni and sprinkled with parmesan cheese, mangia!
