Kathy’s Irish Soda Bread

 3 cups of flour
 1/2 cup sugar
 1 cup of raisins
 1/4tsp cream of tartar
 1tsp salt
 2 eggs, beaten
 1 stick of margarine, cut in pieces
 3tsp baking powder
 1 1/4 cup buttermilk (you can make your own! See directions)
 1tsp caraway seeds

Preheat oven to 350 degrees and grease a 10" cast-iron frying pan.

Mix dry ingredients in large bowl.

Blend in margarine, pieces at a time, with two forks.

Add buttermilk and eggs, stirring well.

Pour into greased pan and make a "T" on surface of batter/dough.

Bake for 1 hour.

****Make you own buttermilk: Stir in 1-2 TB of white vinegar to 1 1/2 cups of milk. Let stand for 1 hour. You're good to go!
