Colleen’s Black Bottom Cupcakes

I will not lie: this is my absolute favorite cupcake. The fact that they're meant to be tiny, equates to me justifying a dozen in my tummy whenever I'm in striking distance. Impossible not to love. So excited to have this recipe . . . or will it be my waistline's downfall?

Chocolate Batter
 1 1/2 cups of flour
 1 cup of sugar
 1/4 cup of cocoa
 1tsp baking soda
 1/2tsp salt
 1 cup water
 1/3 cup of oil
 1TB vinegar
 1tsp vanilla extract
Cream Cheese Batter
 8oz. cream cheese, softened at room temperature
 1 egg
 1/3 cup of sugar
 1/8tsp salt
 12oz. mini chocolate chips

Preheat oven to 350 degrees

Line a mini-muffin tray with 1 3/4" liners

Sift together dry ingredients of chocolate batter in large bowl

Then add remaining chocolate batter ingredients and beat well. Set aside.

In a small bowl, beat all of the cream cheese batter ingredients together except the chocolate chips.

Now fold in the chocolate chips into the cream cheese batter

Drop 1TB of chocolate batter, followed by a rounded 1tsp of cream cheese batter into each muffin liner

Bake for 15-20 minutes

Try not to eat all of them at once. Seriously, try
